50 Hollywood Oysters
Location: Hogs Neck Creek – Patuxent River – Hollywood, Maryland
Size: approx 3″ with a cup
Farming Technique: Hollywoods are grown from oyster seed in our hatchery until they are about 1/2″. Then they are grown in bags in cages in the water column until they are about 2″ when they are transferred to tray cages until harvest at 3″.Â The grow bags keep our ‘babies’ safer from hungry Maryland Blue Crabs.
Why Hollywood: There are many holly trees in our woods and there are fossilized shellfish in our creek. We think the fossils add the minerality to the sweet mossy taste of a Hollywood Oyster.
Flavor: Sweet oyster with tons of complex flavors – mineral and mossy; clean finish.
